Christmas Banana Pancakes

Ingredients

1 ripe banana

1 cup nut milk

1 tsp vanilla

1 cup oats

1 tbs baking powder

½ tsp salt

2 tbs coconut oil


Method

  1. Mash banana in a medium bowl. Whisk in milk and vanilla until well combined.

  2. Grind oats into flour in a food processor or blender, if you prefer a smoother texture. Add raw oats or oat flour to the wet ingredients. Add baking powder and salt, mixing well.

  3. Add coconut oil to a griddle or pan at medium high heat. Spoon about a third of the batter, and cook until bubbles begin to form at the edges. Flip and cook until golden brown on the other side, this should take only a couple of minutes. Repeat with remaining batter.


  1. Serve with maple syrup, berries, and more sliced bananas. Merry Christmas!
