Tofu Scramble

Tofu scramble is one of my comfort meals, delicious and endlessly customizable.

Ingredients
1 teaspoon garlic, minced
1 teaspoon miso
1/4 block tofu, crumbled
sprinkle of turmeric and black pepper
1 teaspoon nutritional yeast
handful of greens
Method
On medium-high heat, add garlic and miso to a pan and cook until fragrant.
Crumble tofu into the pan and stir in spices.
After a few minutes, add in your greens and cook until volume decreases by about a half.
I topped mine with the cherry tomatoes and avocado i had on hand. If you’re looking for a kick, add a little salsa or pickled veg.
